Just like environmental display for hotels, this approach consists of measuring and communicating the environmental impacts of a catering establishment, whilst adhering tofe cycle analysisprinciples. Each sector defines its calculation rules and the associated process, which makes it a reliable and reproducible method that can quantify the impacts and compare products. What is Betterfly Tourism’s role in the project?
As with hotels, Betterfly Tourism plays a central role in the project: management of a pilot project in Brittany; creation of the initial method; development of the first sectoral impact database; development of a dedicated calculation module in Winggy; drafting of the first reference document; proposal of the label format.
What are the benefits for participating restaurants?
The benefits are the same as for hotels:
- Measuring and curbing environmental impacts,whilst benefitting from an analysis of several indicators from Winggy: greenhouse gases, impact on water, percentage of organic produce, percentage of local products, seasonal products, threatened fish species, quantity of waste broken down by type… a veritable environmental ID card for the proposed service.
- Reducing operating costs because the environmental analysis is coupled with a financial analysis. It is therefore possible to design an action plan in Winggy that reduces costs as well as environmental impacts. Thousands of euros can potentially be saved each year.
- Informing clients bout their commitment through the environmental tag. This makes it possible to explain the initiative, to showcase transparency and to shed light on the establishment’s activity. This label can be promoted on the establishment’s website, on social networks and on some restaurant guide websites such as Place To Bio.
What are the next steps for restaurant environmental display?
Firstly, to make the scheme official (for the moment the scheme is voluntary, based on the generic method of environmental display).
The next step is to roll out the scheme in parallel with hotel environmental display. Indeed, the display system is one of the only sustainable tourism schemes that allows consistency between the accommodation and catering sectors.
